Ingredients

½ cup unsalted Butter (melted) 1 cup AP flour 1 cup Yellow Cornmeal 1 tablespoon Sugar 2 teaspoons Baking Powder ½ teaspoon Baking Soda ½ teaspoon Salt 1½ cups Buttermilk 2 Large Eggs

Instructions

Add ½ cup unsalted butter to a cold cast iron pan. Place on a burner and melt butter on medium heat, set aside to cool slightly before adding to batter. In a large bowl whisk together all dry ingredients. Add buttermilk and eggs and mix until well combined. Then add the slightly cooled melted butter and mix until just combined. Add mixture to a hot cast iron pan and bake in a preheated 400-degree oven until cornbread begins to brown on top and a toothpick inserted in the center comes out clean (about 20-25 minutes). Additional Instructions

Alternative to a cast iron pan: Preheat the oven to 400F and position a rack in the middle. Lightly grease a 9-inch cast iron skillet or 9-inch square baking dish with butter and place the skillet/dish into the oven to heat up. The other ½ cup of butter in the recipe should be melted and the slightly cooled butter should be added after the dry and wet ingredients have been well combined.
